GROOT VOEL (BIG BIRD) PIZZA
PASTRY Cheese Crusted Sweet sticky Ostrich & Bacon Homemade Pizza:
2 x Rolls of Pastry Dough
Little bit of Cake Flour;
400g Ostrich Cubes
200g Streaky Bacon
100g Salami
100g Sliced Ham
700g of Gheddar Cheese
140g of Mozzarella Cheese
100g of Parmesan Cheese
1 x medium Onion
1 x Quarter Cup Worcestershire Sauce
1 x Quarter Cup Brown Vinegar
1 x Tablespoon of Balsamic Vinegar
1x Quarter Cup Brown Sugar (Or to Taste)
1 x Tablespoon Tomato Sauce (Or to taste)
2 x Table spoons Brown Union Soup Powder
2 x Tablespoons Oil
Tomato Paste
1 x Teaspoon #Spur Salt
1 x Teaspoon #Sixgungrill spice
In a pan bring Oil, Worcestrshiresauce, Brown Vinegar, Brown Sugar, Balsamic Vinegar, Tomato Sauce and spices to a boil;
Add Brown Union Soup Powder and Mix;
Add the Ostrich Cubes into the sauce and bring to boil again, stir well;
Place on low heat for about 15mins, stirring until sauce becomes a sweet sticky consistency, and let it pritt on low heat until Ostrich Cubes is soft and cooked through;
Remove ostrich Cubes and Sauce and place in side bowl;
 
Keep pan on low heat and little bit of water to left over Sticky ostrich sauce in pan; (Just enough to desolve the left over stickyness in pan;
Stir well and bring to boil, add Bacon Strips to pan and cook bacon until almost crispy or crispy to taste;
Make your fire on the braai – NOU GAAN ONS BRAAI:
Bring wood to a Lekker Fire;
Place Pizza Oven on fire – TOP RACK – bringing the Temperature to 400deg’s;
Roll out Pastry dough on a cutting board layered with small amount of cake flower;
Cut roll in half;
Use half of pastry dough and roll out to a square;
Place grated cheese on edges of Pizza and roll edge over, folding Cheese into sides;
Layer center of Pizza with tomato paste (Thinly smeared), make sure to include folded edges;
Layer pizza with Cheddar Cheese;
Add Thinly cut raw onion rings in around the piza center;
Cut Ostrich Cubes into strips and layer pizza with couple of strips;
Add Thinly sliced Salami & Ham across the pizza;
Layer 3 streaky Bacon strips across the pizza;
Cover with Cheddar & Mozzarella cheese;
Cover Pizza Ladle with cake flour and slide squared prepped Pizza onto Ladle; (It Just Slides the Prepped Pizza dough Better;
Slide that pizza into Hot Pizza Oven like you would slide into a hot bath in the winter;
Make sure heat is kept up, adding wood to keep flames going, like having an argumet with your wife / or your mom;
Keep your eye on crust – as soon as the outside crust starts turning light brown, use Pizza Ladle to turn pizza, like a professional pizza-rian, around, making sure the crust all around is tanned like your wife Ina bikini on the beach;
REMEMBER: THIS IS PASTRY DOUGH, NOT PIZZA DOUGH, SO THE COOKING TIME IS ONLY ABOUT 10 – 15MINS, DEPENDING ON YOUR HEAT;
Remove Pizza from oven and place on plate, cover with Parmesan Cheese and serve;
One pizza feeds two adults and young child;
Repeat Pizza prep with the rest of the pastry dough;

Ps. Remember to clean the kitchen, otherwise the heat in the house will increase beyond the temperature of your pizza heat!
